James H. Moore started Engineered Spirits in 2020 with the dream of delivering a truly extraordinary line of Tennessee whiskey and spirits, made with local ingredients. The focus during our first few years has been on product research and testing to make that dream a reality, as well as renovations to the property — Second Intention Farm — that will be our distillery’s home.
We plan to start our out simply with our first vodka and gin, sourcing GNS from exceptional distilleries, and then proofing it down with the farm’s limestone springwater for a uniquely delicious flavor profile. Doing so will give us time to build our own still, hone our recipes, get your feedback, and develop our very own line of botanical gins. After our first vodka and gin becomes available, we plan to release our small batch, botanical brandies, based on seasonal availability of local fruits and herbs.
Next, our very first whiskey should become available, made with the farm’s Jimmy Red corn and springwater, but distilled and barrelled by another local distillery. Our very own bourbon will follow after that, made with the farm’s water and corn, distilled by us, but aged in our white oak harvested on the farm. That product is going to take a bit longer, but we think you’ll find it well worth the wait.
